Gobi Paratha/ Cauliflower Stuffed Paratha  - sanaa's recipe
  1. 1 Cup = 200ml
For the dough
  1. Wheat flour – 2 cup
  2. Vegetable oil – 1 tbsp
  3. Warm water – 1 cup
  4. Salt – to taste
  1. In a deep bowl, combine together wheat flour and oil. To this add salt water little by little and knead it to a smooth and soft dough. Keep it covered for about 15 minutes. Knead it again for a minute and divide it to six balls.
For the filling
  1. Cauliflower (grated finely) – 1 ½ cup
  2. Green chili – 2, finely chopped
  3. Coriander leaves – 1 tbsp, finely chopped
  4. Ginger – 1 tsp, finely chopped
  5. Red chili powder – 1 tsp
  6. Black pepper powder – ½ tsp
  7. Garam masala powder – ¼ tsp
  8. Salt – to taste
  1. Combine all the above ingredients in a bowl.
To prepare the paratha
  1. All purpose flour – for dusting
  2. Clarified butter/ ghee – for the parathas
  1. Take one dough ball, dust it with little flour and roll it a bit. Add 2 tbsp of the cauliflower filling and cover it nicely with the sides.
  2. Dust it again with little flour and roll it to the size of paratha.
  3. Heat a pan and cook the paratha on both sides till nicely done. Top it with little ghee and serve hot with yogurt.
  4. Repeat the process with the remaining dough and make parathas.

Note : Makes 6 parathas.
