Crispy Veg Fingers - sanaa's recipe
  1. 1 Cup = 200ml
  1. Cabbage (finely chopped) – 1 cup
  2. Carrot (finely chopped) – ½ cup
  3. Capsicum/ bell pepper (finely chopped) – ¼ cup
  4. Onion (finely chopped) – half of an onion
  5. Spring onion (finely chopped) – 2 tbsp
  6. Green chilli – 2 (finely chopped)
  7. Ginger – garlic (finely chopped) – 1 tsp
  8. Black pepper powder – 1 tsp
  9. All purpose flour/ maida – 2 tbsp
  10. Corn flour – 2 tbsp
  11. Salt – to taste
  12. Oil – for deep frying
  1. In a deep bowl add finely chopped cabbage, carrot, capsicum, onion, spring onion, green chili and ginger - garlic and combine evenly. To this add black pepper powder, all purpose flour, corn flour and salt and combine well. Make about 8 - 10 portions and roll one by one into finger shape (grease your palm with little oil if required).
  2. Heat oil in a deep pan over medium flame and fry the prepared veg fingers in batches till golden brown. When done, move the veg fingers to a paper towel and remove excess oil. Serve hot with tomato ketchup and mayonnaise.
