Chicken Fajita Pizza With Stuffed Crust - sanaa's recipe
  1. 1 Cup = 200ml
For the pizza base
  1. All purpose flour/ maida – 2 ½ cup
  2. Milk powder -3 tbsp
  3. Sugar – 1 tsp
  4. Salt – 1 tsp
  5. Instant Yeast –1 ½ tsp
  6. Baking powder – ½ tsp
  7. Oregano – ¼ tsp
  8. Red chili flakes – ¼ tsp
  9. Basil - a pinch (optional)
  10. Olive oil – 3 tbsp
  11. Luke warm water (not too hot) – ½ - ¾ cup (enough to make a smooth dough)
  1. Combine well all ingredients together except oil and water. To this add oil and mix well.
  2. Add hot water little by little and knead well to smooth dough. Coat it with a thin layer of oil and keep it aside covered for about 1 ½ hours to rise.
For topping
  1. Chicken (boneless) – 400 gram (cut to thin strips)
  2. Red chili powder – 2 tsp
  3. Black pepper powder – 1 ½ tsp
  4. Onion powder – ½ tsp
  5. Garlic powder – ½ tsp
  6. Onion – 1, chopped
  7. Capsicum – 1, chopped
  8. Salt – to taste
  9. Oil – 2 tbsp
  1. Marinate the chicken pieces with red chili powder, black pepper powder, onion powder, garlic powder and salt and keep it in the refrigerator for an hour.
  2. Heat oil in a pan, add the chopped onion and capsicum and saute over high flame for about 2 – 3 minutes. Add the marinated chicken to this and cook for about 8 - 10 minutes over high flame stirring occasionally. Reduce the flame and cook till done. Keep it aside.
Other ingredients
  1. Onion – 1, thinly sliced
  2. Capsicum – 1, thinly sliced
  3. Tomato – 1, chopped
  4. Lemon juice – ½ tsp
  5. Mozzarella cheese sticks – 6 ( cut it to two lengthwise)
  6. Butter (melted) – 2 tbsp
  7. Red chili flakes – ¼ tsp
  8. Oregano – ¼ tsp
  9. Spreadable cheddar cheese – ¼ cup
  10. Pizza sauce – ¼ cup (homemade or store bought)
  11. Mozzarella cheese (shredded) – 2 ½ cup
  12. Salt – a pinch
  1. Preheat the oven to 180 degree. Grease the pizza pan with butter and keep it ready.
  2. Combine together onion, capsicum, tomato and little salt in a bowl. Keep it ready.
  3. Take the dough out, punch it down and knead it for a minute. Divide the dough into two. Roll one portion of the dough to a big circles.
  4. Place the cheese strings all around the sides of the rolled dough and cover it with the sides of the rolled dough. Lightly wet the sides of the dough to stick the sides so that the cheese sticks are covered properly (use a fork to press it neatly). Carefully move it to the greased pizza pan and keep it covered for about 15 minutes. Prick it all over with a fork and bake it in the oven for about 6 - 8 minutes.
  5. Take out the pizza base from the oven, brush it with melted butter and spread 2 tbsp cream cheese spread. Spread 2 tbsp pizza sauce and sprinkle ¼ cup shredded mozzarella cheese.
  6. Top it with half of the cooked chicken and the vegetable mix. Top it with 1 cup mozzarella cheese and sprinkle little red chili flakes and oregano.
  7. Bake it for about 17 – 20 minutes (or till the cheese melts completely and the sides of the pizza base turns golden. Remove from oven, let it sit for about 2 - 3 minutes. Make one more pizza following the same procedure. Serve hot.
