Chocolate Cherry Cups - sanaa's recipe
  1. 1 Cup = 200ml
For the biscuit cups
  1. Digestive biscuits (or any other of your choice) – 250 gram (grind it to fine powder)
  2. Powdered sugar – ¼ cup
  3. Unsalted butter – 4 tbsp (at room temperature)
  4. Fresh cream/ thick cream – ¼ cup
  5. Cooking chocolate (chopped) – 2 tbsp (optional)
  1. Preheat the oven to 200 degree. Grease silicon cupcake mold with butter and keep it ready.
  2. Mix all the above ingredients except cooking chocolate in a deep bowl till well combined. Make about 10 – 12 balls (or more if using small cupcake molds) out of it and line it evenly in the greased cupcake molds with your fingers. Bake it in the oven for about 8 – 10 minutes. Remove from the flame and leave it to cool at room temperature. When cooled slowly move it to a wire rack and cool it completely.
  3. Microwave the chopped chocolate for about 45 seconds to 1 minute, stir well till it melts completely. Line the prepared biscuit cups with this melted chocolate and leave it to cool. Keep it aside.
For the filling
  1. Thick cream/ fresh cream – ¼ cup
  2. Cooking chocolate – ¼ cup (finely chopped)
  3. Cream cheese – 120 gram
  4. Condensed milk – ½ cup
  5. Fresh cream/ thick cream – ¼ cup
  6. Powdered sugar – 2 tbsp
  7. Vanilla essence – ½ tsp
  8. Fresh cherries (thinly slices) – ½ cup + 10 – 12 (to garnish)
  1. To prepare the chocolate ganache, heat the thick cream in the oven for about 45 second to one minute (till it starts to bubble). Pour this over the chopped chocolate and stir well till the chocolate melts completely. Keep it ready.
  2. In a deep bowl beat together cream cheese, condensed milk, fresh cream, powdered sugar and vanilla essence till well combined. Pour this mixture to an icing bag (or use a spoon to fill the biscuit cups).
  3. Take the prepared biscuit cups, add little chocolate ganache and 2 tsp of sliced cherries to it. Fill the cup with the prepared cream cheese mixture. Garnish with little chocolate ganache and a cherry. Cool it for about an hour. Serve.

Note : Any fruit of your choice can be used instead of cherries. Makes about 10 - 12 Chocolate Cherry Cups or more depending on the size of the cupcake mold you use.
