Palak Paneer

Ingredients
- Palak/ spinach leaves - 1 big bunch
- Green chili - 2
- Paneer cubes - 1 cup
- Cumin seeds - ¾ tsp
- Crushed garlic -4 - 5
- Dried red chilies - 2
- Onion - 1, chopped
- Tomato - 1 (big), chopped
- Coriander powder - 1 tsp
- Garam masala powder - ¾ tsp
- Lemon juice - 1 tsp
- Fresh Cream - 2 tbsp
- Salt - to taste
- Butter - 4 tbsp
Method
- Remove the stem of the palak leaves and wash. In a deep pan, boil the cleaned palak leaves with enough water. When it starts to boil, reduce the flame and cook it for about 2 - 3 minutes. Remove from the flame, drain the hot water and pour cold water over it. Again drain the water and grind it with green chili to make affine paste. Keep it aside.
- Put the paneer cubes in hot water for about 5 minutes to become soft.
- Heat butter in a deep pan, add cumin seeds and let it crackle. To this add crushed garlic and dried red chili and saute for few seconds. Add the chopped onion to this and saute till soft.
- Add chopped tomatoes and saute for two minutes. Now add the coriander powder and garam masala powder and salt and saute till the tomatoes are soft and oil appears on top.
- Add the palak puree to this on high flame and saute well for about 2 - 3 minutes. Reduce flame and add paneer cubes to this and combine well.cook for a minute. Add lemon juice and fresh cream, combine well and remove from flame. Serve hot with roti, naan or chapathi.
