Mutton Biriyani

For the mutton masala
Ingredients
- Mutton - 1 kg
- Cardamom - 3
- Cloves - 3
- Cinnamon - 1 small piece
- Onion - 6
- Tomato - 3
- Ginger -2 piece
- Garlic - 10 - 12 cloves
- Green chili - 10 - 12 (or according to your taste)
- Yoghurt - ½ cup
- Red chili pwd - ½ tsp
- Turmeric pwd - ¼ tsp
- Lemon juice - 2 tbsp
- Coriander leave
- Salt - to taste
- Ghee - 5 tbsp
Method
- Grind garlic, ginger and green chili with yoghurt and keep aside.
- In a deep pan add ghee. When hot add cardamom, cinnamon and cloves to it.
- Add finely sliced onion and saute till soft. To this add chopped tomatoes and the grinded chili-garlic-ginger mixture and saute till the tomato is cooked.
- Now add chili powder, salt and turmeric powder to it and saute it till the raw smell disappears.
- Add the mutton to it and cook it on low flame. Add the lemon juice and coriander leaves and remove from flame.
For the rice
Ingredients
- Basmati rice - 4 cups
- Cardamom - 2
- Cloves - 2
- Cinnamon - 1 small piece
- Water - 6 cups
- Salt - to taste
- Ghee- 3 tbsp
- Oil - 3 tbsp
Method
- Boil water and keep aside.
- Heat ghee and oil together in a deep. Add cardamom, cloves and cinnamon to it. Now add the washed basmati rice to it and fry it for about 5 minutes stirring continuously. Add enough salt to it.
- Add the boiled water to it and cook the rice covered till done.
Layering the rice and masala
Ingredients
- Garam masala - just enough to sprinkle on each layer
- Rose water (optional)
Method
- In a deep pan, make a layer with prepared rice. Sprinkle little garam masala pwd and very little rose water. Now add make a layer of mutton masala over the rice layer .then again the rice, little garam masala and rose water, then again mutton masala. Repeat the process. The top layer should be rice and sprinkle little garam masala pwd.
- Top it with fried onion, cashew and raisins and heat it covered, on low flame for about 15 - 20 minutes and remove from flame.
