Mushroom - Chicken Pizza

- 1 Cup = 200ml
For the base
Ingredients
- Plain flour - 3 cup
- Instant yeast - 2 ½
- Sugar - 1 tsp
- Salt - 1 ½ tsp
- Oil - 2 ½ tsp
- Warm water - ¾ - 1 cup ( as required to knead the dough )
Method
- Mix flour, yeast, sugar and salt together. To this add oil and make soft dough adding enough water..knead the dough well till soft. Keep it aside covered for about 1 ½ - 2 hours to expand.
For the topping
Ingredients
- Chicken breast (boneless) - 250 gram
- Red chili pwd - 1 tsp
- Soy sauce - ½ tsp
- Red chili sauce - 1 ½ tbsp
- Salt - to taste
Method
- Marinate the chicken pieces with the remaining ingredients and fry it in about 2 - 3 tbsp oil till done. Cut it to small cubes and keep it aside
Ingredients
- Mushroom - 2 cups (cleaned and sliced)
- Butter - 2 tbsp
- Salt - a pinch
Method
- Heat butter in a pan and saute the sliced mushroom on low flame adding a pinch of salt for about 4 - 5 minutes. Keep it aside.
Ingredients
- Onion (medium sized) - 2, cut it to cubes
- Capsicum/ bell pepper (red, green , yellow - for a colorful look) - 1 cup, cut it to thin strips
- Tomato - 1 , cut it to cubes
- Oregano - to sprinkle
- Chili flakes - to sprinkle
- Spreadable cream cheese - ½ cup
- Pizza sauce - 1 cup
- Cheddar cheese (grated) - ½ cup
- Mozzarella cheese (grated) - 1 - 1 ½
- Black and green olives - 2 - 3 tbsp (sliced)
- Butter - 2 tsp
- Salt - to taste
Method
- Take the dough and punch it down and divide it into two. Roll it to make a large sized pizza base. Grease a large pan with butter and move the rolled dough to it. Prick it with a fork here and there and keep it covered for about 15 minutes.
- Brush the rolled dough with little butter, spread half of the spreadable cream cheese, pizza sauce ,then the shredded cheddar cheese.
- Mix the diced onion, capsicum and tomato in a bowl, add little salt, a pinch of oregano and chili flakes and mix well. Top half of it over the prepared pizza base.
- Top it with the diced chicken, sliced mushroom and sliced olives. Now top it with shredded mozzarella cheese and sprinkle a pinch of oregano on top.
- Bake it for about 30 - 35 minutes in a preheated oven at 200 degree.(or till the pizza base is golden and the cheese on top melts). Serve hot.
- Make the second one also with the same procedure.
Tomato Paste for topping (sauce)
Ingredients
- Tomato - 4 big
- Onion - ½, chopped
- Garlic - 1 1/2 tsp
- Crushed red chilli - 1 1/4 tsp tsp
- Oregano - ½ tsp
- Vinegar - 1 tbsp
- Salt - to taste
Method
- Add oil in a pan and add chopped onion into it and saute till transparent
- To this add all other ingredients (for Tomato paste topping). Cook on low flame till dry
