Chicken Filled Croissants

Chicken Filled Croissants - sanaa's recipe
  1. 1 Cup = 200ml
For the dough
  1. All purpose flour - 2 cup
  2. Instant Yeast - ¾ tsp
  3. Sugar - 1 tsp
  4. Salt - to taste
  5. Baking pwd - ½ tsp
  6. Butter - 2 tbsp
  7. Oil - 2 ½ tbsp
  8. Warm milk - ½cup+ water - 2 - 3 tbsp(mix together), more or less milk to make a smooth dough
  1. In a deep bowl, mix together all purpose flour, instant yeast, sugar, salt and baking powder till evenly combined.
  2. To this add melted butter and oil and mix it lightly. Now add the milk to it little by little and make smooth dough. Knead it for about 7 - 10 minutes till soft and keep it aside covered for about 1 hour.
For the filling
  1. Boneless chicken breast - 200 gram (cut it to very small pieces)
  2. Ginger - garlic (crushed) - 1 tsp
  3. Onion - 1, chopped
  4. Green chili - 2, chopped
  5. Soy sauce - 1 tsp
  6. Carrot (chopped) - 2 - 3 tbsp
  7. Capsicum - 2 - 3 tbsp
  8. Red chili pwd - 1 tsp
  9. Black Pepper pwd - ½ tsp
  10. Cumin pwd - ¼ tsp
  11. Garam masala pwd - a pinch
  12. Soy sauce - ½ tsp
  13. Salt - to taste
  14. Butter - 2 tbsp
  1. Heat butter in a pan, add crushed ginger - garlic and saute for few seconds. To this add chopped onion and green chili and saute till it changes the color.
  2. Now add the chicken, soy sauce and enough salt and mix till well combined. Cook it on medium high flame till chicken is cooked and turns its color lightly.
  3. Add the chopped carrot and capsicum to this and saute for another 3 - 4 minutes. Add the red chili pwd, black pepper pwd, cumin pwd and garam masala pwd and saute till oil appears on top. Sprinkle 1/2 tsp soy sauce to it, combine well and remove from flame. Let it cool.
Making croissants
  1. Butter - 1 ½ tbsp
  2. Egg yolk - 1 + milk - 1 tbsp (mix it together)
  1. Make a single perfectly shaped ball with the dough and roll it to a very big circle (about 30 cm diameter) dusting till flour. Rub the rolled dough with little butter all over and cut it to 8 portions as shown in the picture (no. 2).
  2. Take one portion out of it, put little filling at the bottom of the triangle (pic no. 3) and slowly roll it to make the shape of croissants. The tip of the triangle should come at the bottom of the croissant so that it don't get opened while baking. (if it don't reach till bottom, stretch the dough little very lightly and bring the tip to the bottom). Move the prepared croissants to a greased pan and keep it covered for another 20 - 25 minutes.
  3. Preheat the oven to 180 degree. Meantime glaze the croissants with the egg yolk mixture. Now bake it for about30 - 35 minutes (or till it turns golden color on top). Rub the baked croissants with butter and keep it covered foe about 5 minutes. Serve.
