Layered Crepes With Chicken Filling/ Chattippathiri - sanaa's recipe
  1. 1 Cup = 200ml
For the chicken filling
  1. Boneless chicken ( cooked adding 1 tsp pepper; ¼ tsp turmeric; enough salt and 1 ½ cup of water and shredded), 1 ½ cup
  2. Cinnamon - 1 - small piece
  3. Onion - 4, (finely sliced)
  4. Green chili - 3 - 4 (chopped)
  5. Crushed ginger garlic - 1 ½ tsp
  6. Pepper pwd - ½ tsp
  7. Turmeric pwd - ¼ tsp
  8. Garam masala pwd - ¼ tsp
  9. Coriander leaves - little
  10. Curry leaves - little
  11. Oil - 3 tbsp
  12. Salt - to taste
  1. Heat oil in a pan, add the cinnamon and then sliced onion, chopped green chili and enough salt. Saute it on medium flame till soft. To this add crushed ginger garlic and saute till the raw smell disappears.
  2. Add pepper pwd, turmeric pwd and garam masala pwd and saute for another 2 - 3 minutes on low flame. Add the curry leaves and coriander leaves and mix well.
  3. To this add the shredded chicken, mix well and cook on low flame for another 4 - 5 minutes. keep it aside
For the crepes
  1. All purpose flour - 1 ¼ cup
  2. Egg - 1
  3. Water - 1 ½ cup (little more or less to make a smooth thin batter)
  4. Salt - to taste
  1. Mix together the above ingredients to make a smooth batter adding enough water. Whisk till smooth.
  2. Heat a small non - stick pan, pour very little batter to it and spread evenly in the pan to get circle shape. Remove the crepes from the pan when just done. Repeat the process till all are done.
  1. Egg - 3
  2. Milk - ¼ cup
  3. Salt - to taste
  4. Ghee - 2 tbsp
  1. Mix egg, milk and salt in a bowl. This is for dipping the crepes.
  2. Heat 1 tbsp oil in a deep pan, put it on low flame. Take a crepe, dip it in the egg mixture and put it in the pan. Again dip another crepe and put it over the first crepe.
  3. Now spread little chicken filling all over the crepes, leaving the sides (sides has to be sealed properly).
  4. Again dip two crepes in the egg mixture and put it over the chicken filling (one by one). Again the filling. Repeat the process till all are done.
  5. On the top most layer should be the crepes (not the filling). Pour the remaining egg mixture over and at the sides of the layered crepes and cook it covered on low flame for about 10 - 15 minutes.
  6. Slowly turn it to the other side (check not to break it), add the remaining ghee at the sides of the pan and cook for another 8 - 10 minutes. remove from flame, cut it as desired and serve hot.
