Garlic Lemon Chicken With Lemon Rice

- 1 Cup = 200ml
For the marinade
Ingredients
- Chicken thighs with skin – 1 kg
- Lemon juice – 3 tbsp
- Lemon zest – 2 tsp
- Crushed garlic – 2 tbsp
- Oregano – 1 ½ tsp
- Olive oil – 2 tbsp + 2 tbsp (for frying)
- Salt – to taste
Method
- Marinate the cleaned chicken with all the above ingredients for an hour or two.
- Heat 2 tbsp olive oil in a deep pan and fry the marinated chicken pieces over high flame (reserve the remaining marinade for later use), till both the sides are golden brown. Remove the chicken pieces from the pan and keep it aside (chicken will be cooked completely with the rice).

- Onion – 1, chopped
- Basmati rice – 3 cup
- Water – 5 cup
- Lemon juice – 1 tbsp
- Black pepper powder – 2 tsp
- Oregano – 1 tsp
- Salt – to taste
- Almonds – 2 tbsp (sliced)
Method
- In the same oil in the pan (in which chicken is fried), add chopped onion and saute for a minute. Add basmati rice and fry for 2 minutes. Add the remaining ingredients to it and combine.
- To this add the reserved marinade and the fried chicken pieces and cook covered over low flame for about 20 minutes or till cooked completely. Serve hot.
