- 1 Cup = 200ml
For the marinade
Ingredients
- Prawns (big) – 20 – 25 pieces
- Red chili powder – ½ tsp
- Black pepper powder – 1 tsp
- Turmeric powder – a pinch
- Salt – to taste
Method
- In a bowl, combine together all the above ingredients and keep it aside for about half an hour.
For the coating
Ingredients
- All purpose flour – ½ cup
- Corn flour – 6 tbsp
- Black pepper powder – 1 tsp
- Egg – 1 (large)
- Salt – ¾ tsp
- Oil – for deep frying
Method
- Heat oil in a deep pan over medium flame and keep it ready.
- In a deep bowl, combine together all purpose flour, corn flour, black pepper powder and salt.
- Whisk egg in another bowl and keep it ready. Take the marinated prawns one by one, first coat the prawn with the flour mixture, then dip it in egg and again in the flour mixture coating all the sides.
- Fry these prawns in batches for about 5 – 6 minutes (or till golden colour) reducing the flame in between. Move the fried prawns to a paper towel and remove excess oil.
For the sauce and for serving
Ingredients
- Mayonnaise – ½ cup
- Red chili sauce – 2 tbsp
- Honey – 2 tsp
- Salt – to taste
- Lettuce, olives, tomato and spring onion – for serving
Method
- In a bowl combine together mayonnaise, red chili sauce, honey and salt. Toss the fried prawns in this sauce.
- Place the lettuce leaves in a serving plate, top it with the prawns with sauce. Serve garnished with olives, tomato and spring onion.
