Drumstick Curry/ Muringakka Curry - sanaa's recipe
  1. 1 Cup = 200ml
To grind
Ingredients
  1. Coconut (grated) – 1 cup
  2. Cumin seeds – ½ tsp
  3. Fennel seeds – ¼ tsp
  4. Garlic cloves – 2
  5. Turmeric powder – ½ tsp
  6. Water – ¾ cup
Method
  1. Grind the above ingredients to a fine paste and keep it ready.
Ingredients
  1. Drumsticks – 4 (cleaned and cut to long pieces)
  2. Onion – 1 (chopped)
  3. Green chili – 3 (chopped)
  4. Tomato – 2 (chopped)
  5. Turmeric powder – ¼ tsp
  6. Water – 1 ¾ cup
  7. Mustard seeds – ½ tsp
  8. Cumin seeds – ¼ tsp
  9. Dried red chili – 2
  10. Curry leaves – 10 – 12
  11. Salt – to taste
  12. Oil – 2 tbsp
Method
  1. Heat 1 tbsp oil in a pan, add chopped onion and green chili and saute till soft. Add chopped tomato and cook till soft.
  2. Add turmeric powder and salt and saute till oil appears on top. Add the drumstick pieces and cook for 2 minutes. Add 1 ½ cup water and cook over low flame till cooked (about 15 – 20 minutes).
  3. Add the ground coconut paste to this and combine well and cook over low flame. Remove from flame when it starts to boil.
  4. Heat 1 tbsp oil in another pan, add mustard seeds and cumin seeds and let it splutter. Add dried red chili and curry leaves and remove from flame. Add this to the curry and combine. Serve hot with plain rice.
