Pocket Shawarma - sanaa's recipe
  1. 1 Cup = 200ml
For the marinade
Ingredients
  1. Boneless chicken – ½ kg (cut to thin strips)
  2. Red chili powder – 2 tsp
  3. Black pepper powder – 1 tsp
  4. White pepper powder – ½ tsp
  5. Cumin powder – ¼ tsp
  6. Crushed garlic – 2 tsp
  7. Yogurt – 1 tbsp
  8. Lemon juice – 1 tbsp
  9. Salt – to taste
  10. Olive oil – 3 tbsp
Method
  1. Marinate the boneless chicken strips with the remaining ingredients except oil and keep it covered in the refrigerator for about 2 – 3 hours.
  2. Heat oil in a pan, add the marinated chicken pieces and fry till done over medium flame stirring occasionally. Keep it aside.
Other ingredients for filling
Ingredients
  1. Onion – 1 (thinly sliced)
  2. Tomato – 1 (thinly sliced)
  3. Cucumber – ½ (cup sliced)
  4. Olives – 2 tbsp (thinly sliced)
  5. Coriander leaves – 2 tsp (finely chopped)
  6. Lemon juice – 2 tsp + few drops
  7. Mayonnaise - 4 tbsp
  8. Yoghurt (curd) – 3 tbsp
  9. Crushed garlic – 3 big cloves
  10. Pita bread – 3 – 4 ( cut to halves and open the pocket)
  11. Lettuce – 8 – 10 big pieces
  12. French fries – ½ cup (optional)
  13. Salt - to taste
Method
  1. In a bowl combine together onion, tomato, cucumber, olives and little salt and combine well. To this add the fried chicken pieces and 2 tsp lemon juice and combine well.
  2. In another bowl, mix together mayonnaise, yogurt, crushed garlic, few drops of lemon juice and little salt and combine well.
  3. Take one pita bread half, spread little mayonnaise – yogurt mixture all over inside the pita pocket, fill it with lettuce and the chicken – veg mixture and some french fries. Serve immediately.
