Khara Masala Gosht/ Mutton With Whole Spices

- 1 Cup = 200ml
Ingredients
- Mutton – ½ kg
- Cumin seeds – ½ tsp
- Coriander seeds – ¾ tsp
- Whole black pepper – ½ tsp
- Bay leaves - 2
- Dried red chili – 2
- Cardamom – 2
- Cloves – 2
- Cinnamon – 1 small piece
- Onion – 2 (thinly sliced)
- Green chili – 2 (chopped)
- Ginger garlic (crushed) – 2 tsp
- Red chili powder – 1 ½ tsp
- Turmeric powder – ¼ tsp
- Water – 1 ½ cup
- Yogurt – ¼ cup
- Coriander leaves – 3 tbsp
- Salt – to taste
- Clarified butter – 3 tbsp
Method
- Heat ghee in a pan, add all the whole spices from ingredients no. 2 – 9 and fry for few seconds. Add sliced onion, crushed ginger garlic and chopped green chili and saute for a minute.
- Add the cleaned mutton pieces and combine well. Add enough salt and cook over low flame stirring occasionally. Cook for about 30 minutes.
- Add red chili powder and turmeric powder and cook till oil appears on top. Add yogurt and combine well. Cook it till done adding little by little water as required. Cook till the mutton is cooked completely and the mixture is thick. Add coriander leaves to it and combine well. Remove from flame and serve hot.
