Kothu Parotta - sanaa's recipe
  1. 1 Cup = 200ml
Ingredients
  1. Lachcha paratha/ parotta – 6
  2. Mustard seeds – ½ tsp
  3. Cumin seeds – ¼ tsp
  4. Onion – 2 (chopped)
  5. Green chili – 1 (chopped)
  6. Ginger – garlic (crushed) – 2 tsp
  7. Tomato - 1, big (chopped)
  8. Red chili powder – 1 ½ tsp
  9. Black pepper powder – ¾ tsp
  10. Turmeric powder – ¼ tsp
  11. Garam masala powder – ½ tsp
  12. Egg – 3
  13. Coriander leaves – 2 tbsp
  14. Salt – to taste
  15. Oil – 2 tbsp
Method
  1. Cut the cooked paratha to small pieces and keep it ready.
  2. Heat oil in a pan, add mustard seeds and cumin seeds and let it splutter. Add the chopped onion and salt and saute till soft. Add green chili and crushed ginger garlic and saute till the raw smell disappear.
  3. Add the chopped tomato and cook till soft. Add red chili powder, black pepper powder, turmeric powder and garam masala powder and saute till the raw smell disappear and oil appears on top.
  4. Add the paratha pieces and combine well. Break the eggs to it and saute really well till the egg is cooked completely. Cook for another 4 – 5 minutes over low flame. Add the chopped coriander leaves and remove from flame. Serve hot.
