Mutton Korma

Mutton Korma - sanaa's recipe
  1. 1 Cup = 200ml
For the marinade
Ingredients
  1. Mutton – ½ kg
  2. Cardamom – 2
  3. Cinnamon – 1 small piece
  4. Cloves – 2
  5. Whole black pepper corn – ½ tsp
  6. Red chili powder – 1 tbsp
  7. Turmeric powder – ¼ tsp
  8. Crushed ginger – garlic – 2 tsp
  9. Yogurt – 2 tbsp
  10. Salt – to taste
Method
  1. Grind to fine powder cardamom, cinnamon, cloves and whole black pepper.
  2. In a bowl, marinate the mutton pieces with the ground whole spice powder (step 1) and the remaining ingredients for about ½ an hour.

Ingredients
  1. Onion – 2, big (thinly sliced)
  2. Green chili – 2, (chopped)
  3. Cumin powder – ¼ tsp
  4. Almond – 15 (soaked in water for about half an hour and blanched)
  5. Milk – 3 tbsp
  6. Coriander leaves – 1 tbsp
  7. Oil – ¼ cup
  8. Salt – to taste
Method
  1. Heat oil in a deep pan, add the sliced onion and saute till soft and turn golden. Add green chili to this and saute for a minute.
  2. Add the marinated mutton pieces and combine well. Cook it for about 4 – 5 minutes stirring occasionally. Add cumin powder and little salt and mix well. Add ¼ cup of water to this and pressure cook this till done.
  3. Grind the almonds with milk to smooth paste. Add this to the cooked mutton and combine well. Add the chopped coriander leaves to this.
  4. Cook for about 5 minutes on low flame. Serve hot.
