Chili Chicken Puffs / Patties With Homemade Puff Pastry - sanaa's recipe
  1. 1 Cup = 200ml
For the puff pastry dough
Ingredients
  1. All purpose flour - 1 ½ cup + ¾ cup for dusting
  2. Unsalted butter - 150 gram (at room temperature)
  3. Water - ½ cup
  4. Salt - ¾ tsp
Method
  1. Combine together all purpose flour and salt in a deep bowl. To this add 3 tbsp butter and combine well with the fingers. Add water to this and knead well to make smooth and soft dough for about 8 – 10 minutes.
  2. Make the dough into a ball, and press it with the fingers to make a big circle like chapathi (picture #1). Cut the butter to 2- 3 pieces and place it over the pressed dough (picture # 2). Fold it to cover the butter (picture # 2 and # 3). Press it with the fingers to spread the butter all over.
  3. Roll it with the rolling pin on both sides (picture # 4). Fold it as shown in the picture (picture #5, #6, #7) dusting enough flour. Wrap it with a cling wrap and cool it for about 15 minutes in the refrigerator.
  4. Take it out and repeat the process in step 3 by rolling it dusting enough flour, fold, wrap and cool 15 minutes. Repeat this process 6 – 7 times to get the layers.
  5. Take it out from the refrigerator, cut it to 3 equal portions, roll one of them to make a big square. Cut it to 4 equal puff pastry squares. Dust it with flour and store it one above the other with wax paper in between each pastry square.

For the marinade
Ingredients
  1. Chicken breast - 300 gram (cut it to small strips)
  2. Red chili powder - 1 tsp
  3. Pepper powder - ¼ tsp
  4. Soya sauce - 1 tsp
  5. Ginger garlic paste - 2 tsp
  6. Corn flour - 1 ½ tbsp
  7. Egg white - 1
  8. Salt - to taste
  9. Oil - for deep frying
Method
  1. Marinate the chicken pieces with the above ingredients and refrigerate for about 2 hours.
  2. Heat oil in a deep pan and fry the marinated chicken just till done. Keep it aside.
Other ingredients for filling
Ingredients
  1. Onion - 2, chopped
  2. Capsicum (small) - 1, chopped
  3. Crushed ginger - garlic - 1 tsp
  4. Red chili powder - 1 tsp
  5. Tomato sauce - 1 tbsp
  6. Chili sauce - 1 tbsp
  7. Soya sauce - 1 tsp
  8. Sugar - a pinch
  9. Salt - to taste
  10. Oil - 2 tbsp
Method
  1. Heat oil in a pan, add chopped onion, capsicum and crushed ginger garlic and saute till soft. Add red chili powder and saute till oil appears on top.
  2. Add all the sauces and combine well. Add a pinch of sugar and enough salt and mix well ( the sauces contain salt, so add salt accordingly) . Add the fried chicken pieces to this and mix well.
Assembling
Ingredients
  1. Take a puff pastry sheet, rub it with little butter, add little filling on one side and fold it. Repeat the process with the remaining puff pastry sheets. Move it to a greased baking tray, brush the puff pastries with oil and bake it in a preheated oven for about 20 - 25 minutes at 220 degree (till it turns golden colour). Serve immediately.

Note : makes 12 puff pastry squares Makes about 12 chili chicken puffs. You can use readymade puff pastry also.
