Tomato Rice

Tomato Rice - sanaa's recipe
  1. 1 Cup = 200ml
Ingredients
  1. Basmati rice - 1 ½ cup
  2. Onion - 2, thinly sliced
  3. Ginger garlic paste - 1 ½ tsp
  4. Green chilies - 4
  5. Tomatoes - 4
  6. Red chili powder - 1 ½ tsp
  7. Turmeric powder - ¼ tsp
  8. Garam masala powder - ½ tsp
  9. Coriander leaves - 2 tbsp
  10. Salt - to taste
For tempering
Ingredients
  1. Oil - 3 tbsp
  2. Mustard seeds - ¾ tsp
  3. Cumin seeds - ½ tsp
  4. Urad daal - 1 tsp
  5. Dried red chili - 2
  6. Cardamom - 2
  7. Cloves - 1
  8. Cinnamon - a small piece
Method
  1. Soak basmati rice for about half an hour. Drain the water, wash it and cook the rice in a deep pan adding about 5 cup of water and enough salt till cooked (for about 12 - 15 minutes). Drain the water completely and keep it aside.
  2. Heat oil in a pan, add mustard seeds and cumin seeds and let it splutter. To this add urad daal, cardamom, cloves and cinnamon and saute for few minutes. Add dried red chili to this.
  3. Add sliced onion and saute till soft. Add chopped ginger - garlic paste and green chili and saute till the raw smell disappear. Add the chopped tomatoes and cook till soft.
  4. Add red chili powder, turmeric powder, garam masala powder and salt and saute till oil appears on top.
  5. Add the cooked rice to this and combine well. Cook for another 2 - 3 minutes on low flame. Serve hot.
