Lemon Rice

Lemon Rice - sanaa's recipe
  1. 1 Cup = 200ml
Ingredients
  1. Basmati rice - 1 ½ cup
  2. Mustard seeds - ¾ tsp
  3. Channa daal - 2 tsp
  4. Urad daal - 1 tsp
  5. Cashew - 10 - 12
  6. Red chili - 2
  7. Green chili - 3 - 4, chopped
  8. Turmeric powder -¼ tsp
  9. Lemon juice - 1 ½ tbsp
  10. Curry leaves - 8 - 10 leaves
  11. Salt - to taste
  12. Oil - 3 tbsp
Method
  1. Soak the basmati rice in water for about 30 minutes. Drain the water, wash it and cook the rice in a deep pan adding about 5 cup of water and enough salt till cooked (for about 12 - 15 minutes). Drain the water completely and keep it aside.
  2. Heat oil in a pan, add mustard seeds and let it splutter. To this add channa daal, urad daal and cashew and saute till golden. Reduce the flame, add the red chilies, green chilies, turmeric powder and curry leaves and saute for few seconds. Add very little salt if required (as u added enough salt while cooking rice). Add the lemon juice to it and combine well.
  3. Now add the cooked rice to it combine well and cook for 2 - 3 minutes on low flame. Serve hot.
