Chocolaty Mocha Cheesecake - sanaa's recipe
  1. 1 Cup = 200ml
For the crust
Ingredients
  1. Chocolate biscuit - 20 (coarsely powdered)
  2. Unsalted butter - 4 tbsp (at room temp)
  3. Powdered sugar - 2 tbsp
Method
  1. Mix all the above ingredients with your finger tip to resemble bread crumbs. Put it in a spring form tin, spread it evenly and press it with your finger tip. Cool it in the refrigerator for about half an hour to set.
For the mocha filling
Ingredients
  1. Thick cream - I cup
  2. Cream cheese - 230 gram (8 oz)
  3. Powdered sugar - ½ cup
  4. Coffee pwd - 2 tsp
  5. Milk - 2 tbsp
  6. Milk chocolate - 100 gram (grated)
Method
  1. Whip the thick cream for a minute and keep it aside .
  2. In another bowl, beat cream cheese and powdered sugar with a beater. Mix coffee pwd in 2 tbsp milk and add it to the cream cheese and mix well.
  3. Melt the grated chocolate in oven, for about 1 - 1 ½ minutes. Stir it well with a spoon till it is well melted. Let it cool for about 2 minutes at room temperature.
  4. Add the thick cream and the melted chocolate to the cream cheese mix and mix till well combines. Pour this mixture over the prepared biscuit base and let it set in the refrigerator for about 2 - 3 hours.
For the chocolaty layer
Ingredients
  1. Milk chocolate - 100 gram (grated)
  2. Milk - ¾ cup
  3. Sugar - 6 tbsp
  4. Condensed milk - ¼ cup
  5. Corn flour - ¼ cup
  6. Water - ½ cup
Method
  1. Mix corn flour in ½ cup of water and keep it aside.
  2. Mix together milk and sugar in a sauce pan and bring to boil. Add the corn flour mix to the boiling milk with continuous stirring. Reduce the flame and cook till thick stirring continuously.
  3. Remove from flame and add condensed milk to it and mix well.
  4. Melt the grated chocolate in oven, for about 1 - 1 ½ minutes. Stir it well with a spoon till it is well melted. Let it cool for about 2 minutes at room temperature. Add this to the milk mixture and combine well. Pour this mixture over the cooled mocha cheesecake filling and refrigerate for about an 1 ½ - 2 hours to set.
  5. Garnish as desired and serve.
