Chicken Tikka Pizza

Chicken Tikka Pizza - sanaa's recipe
  1. 1 Cup = 200ml
For the pizza base
Ingredients
  1. All purpose flour/ maida - 3 cup
  2. Milk powder - 2 tbsp
  3. Sugar - 1 tsp
  4. Salt - 1 ½ tsp
  5. Instant Yeast - 1 ¾ tsp
  6. Baking powder - ½ tsp
  7. Oregano - ¼ tsp
  8. Basil - a pinch (optional)
  9. Olive oil/ vegetable oil - 3 tbsp
  10. Luke warm water (not too hot) - ¾ cup (little more or less to make a smooth dough)
Method
  1. Combine well all ingredients together except oil and water. To this add oil and mix well.
  2. Add hot water little by little and knead well to smooth dough. Coat it with a thin layer of oil and keep it aside covered for about 2 hours to rise.
For chicken tikka topping
Ingredients
  1. Boneless chicken - 350 grams
  2. Red chili powder - 1 tsp
  3. Coriander powder - ½ tsp
  4. Garam masala powder - ½ tsp
  5. Cumin powder - a pinch
  6. Ginger garlic paste - 1 tsp
  7. Lemon juice - 1 tbsp
  8. Salt - to taste
  9. Oil - 2 - 3 tbsp
  10. Mushroom - 4 -5, sliced (optional)
Method
  1. Marinate chicken with all the above ingredients except oil and mushroom and refrigerate for an hour.
  2. Fry the marinated chicken pieces in oil or grill it in the oven drizzling oil all over the chicken till done.
  3. Marinate the sliced mushroom in the same bowl and saute it in the same pan in which you fried chicken. (if you grilled the chicken in oven, saute the marinated mushroom in little butter)
  4. Cut the fried chicken to small pieces and keep it aside.
Ingredients
  1. Onion - 2, diced
  2. Tomato - 1 (big) , diced
  3. Capsicum - 1 , diced
  4. Chili flakes - ½ tsp
  5. Oregano - 2 -3 pinch
  6. Cheddar cream cheese spread - 4 tbsp
  7. Pizza sauce - 4 - 5 tbsp (I used ready- made pizza sauce. You can also use home made pizza sauce)
  8. Garam masala powder - a pinch
  9. Shredded mozzarella cheese - 300 gram
  10. Salt - to taste
  11. Butter - 2 tbsp
Method
  1. Combine together onion, tomato, capsicum and little salt in a bowl. Keep it ready.
  2. Take the dough out, punch it down and knead it for a minute. Make two portions out of it(to make two large pizza), roll the dough to a big circles and move it to a greased (with butter)pizza pan and keep it covered for about 15 minutes.
  3. Prick all over with a fork, rub the whole with melted butter and spread cheddar cream cheese spread. Spread 2 - 2 ½ tbsp pizza sauce, sprinkle very little shredded mozzarella cheese and a pinch of garam masala powder.
  4. Top it with the half of onion mixture and chicken pieces and mushroom. Sprinkle chili flakes and oregano and top it with shredded mozzarella cheese. Again sprinkle little oregano and chili flakes.
  5. Preheat the oven to 180 degree (convection mode) and bake it for about 25 - 30 minutes (or till the cheese melts completely and the sides of the pizza base turns golden.
  6. Remove from oven, let it sit for about 2 - 3 minutes, cut it to pieces and serve hot.
Pizza sauce for topping
Ingredients
  1. Tomato - 4 big
  2. Onion - ½ (finely chopped)
  3. Garlic - 1 tsp
  4. Crushed red chilli - 1 tsp
  5. Oregano - ½ tsp
  6. Vinegar - 1 tbsp
  7. Salt - to taste
Method
  1. Add oil in a pan and add chopped onion into it and saute till transparent
  2. To this add all other ingredients (for Tomato paste topping). Cook on low flame till dry

Note : Recipe to make 2 large pizza if using normal yeast instead of instant yeast, add yeast with water and sugar mentioned above, stir well and keep it aside to rise for about 10 minutes. Then use it for kneading the dough)
