Cheesy Chicken Macaroni - sanaa's recipe
  1. 1 Cup = 200ml
  1. Macaroni - 3 cups
  1. Cook Macaroni as per instructions by manufacturer, adding 1 tsp oil and salt. After cooking drain left over water and run cold water over it and drain it again and keep it aside.
  1. Chicken breast - 250 gm
  2. Chilli pwdr - ½ tsp
  3. Turmeric pwdr - ¼ tsp
  4. Soya sauce - 1 tsp
  5. Salt - to taste
  1. Marinate the chicken with all ingredients from 3-6 for 10 minutes. Fry this marinated chicken in oil and cut the fried chicken into cubes and keep it aside.
  1. Onion - 1 (chopped)
  2. Green Chilli - 2 (chopped)
  3. Capsicum - ½ (chopped)
  4. Ginger garlic paste - 1 tsp
  5. Chilli pwdr - ½ tsp
  6. Pepper - ½ tsp
  7. Salt - to taste
  1. Heat a pan, add 2 tbsp oil and add ginger garlic paste and saute till raw smell disappears.
  2. Add chopped onion and capsicum and green chilli and saute in medium flame for 2 minutes.
  3. Add chilli pwdr and pepper pwdr and saute for 1 minute. Add fried chicken cubes and mix well and keep it aside.
White sauce and other topping
  1. Butter - 3 tbsp
  2. Flour - 3 tbsp
  3. Milk - 250 ml
  4. Pepper - 1 tsp ( or to taste)
  5. Salt - to taste
  6. Cheddar Cheese - ½ cup
  7. Mozzarella cheese - ¼ cup
  8. Crushed red chilli (or chilli flakes) - 1 tsp
  9. Oregano - ½ tsp
  1. Melt the butter in a sauce pan, add in the flour, pepper and salt to it stirring continuously. Cook it for about 3 minutes till the raw smell disappears.
  2. Remove from heat and add milk little by little, stirring continuously, to form a smooth sauce. Return the pan on the heat and cook for about 10 minutes stirring continuously. Remove the pan from heat and add cheddar cheese to it and mix till it melts and well combined.
  3. Mix in the cooked macaroni, prepared chicken mix, chilli flakes and oregano to the prepared cheese sauce and mix well.
  4. Spread this to a greased glass dish and top it with shredded mozarella cheese and sprinkle a pinch of oregano to it. Bake it in a preheated oven for about 25 minutes at 180 degree. Serve hot.
